The tasting menu created following my trip to Guadeloupe was very well received. I’d like to go over the different elements with you and hopefully get your feedback.

The Salmon with cilantro and ginger marinade served with spicy coconut milk created quite an entrance. The entire dish exudes the Caribbean, as highlighted by the coconut and the spice directly from Guadeloupe. The tangy citrus sensation and the hot pimento take me back to those warm evenings and ice cold cocktails.

After 2 glorious weeks in Guadeloupe tasting, smelling, touching, and exploring the rainbow of colors at the Pointe-à-Pitre market, I felt nothing less than inspired in creating this new menu.

My travels have always influenced my cuisine and cooking always sends me to new heights (image)

 

So in the spirit of Guadeloupe, L’Idylle proposes:

 

Citrus-marinated fish and coconut milk piquante (with fresh pimentos from our Guadeloupan friends’ garden!)

Two famous writers of our century have been celebrated at L'Idylle restaurant. Gilles Leroy who won a French price Goncourt in 2007, presented his art with joy and pleasure while tasting delicious bites from Chef Emmanuel Charretier who created them specially for the night.

Mission accomplished!

A big thank you goes to Bill Vance and his team. Wine Festival week was very hectic for us here at L’Idylle, yet so rewarding! The gastronomical supper Monday night made me so proud to be in this profession, and as I have said before, if I could, I would do only this type of menu. Someday, perhaps...
